Zesty Vegan Ceviche!

This ceviche is a perfect summer dish! It is full of veggies, packed with favor, and very zesty!! Since I don't eat seafood this is a great dish to feed your ceviche craving! This could be eaten alone, on a salad, with some blue corn tortilla chips, or with a corn warm tortilla. So many options!

Prep Time: 5 minutes

Serves 4


2 cans Organic Garbanzo Beans

1 Red Bell Pepper

2 Tomatoes

1/4 Red Onion

1 Serrano Pepper (optional)

1 Zucchini

1 Small Bunch Cilantro

Juice of 2 Limes

1/2 tsp Paprika

1 Avocado

1. Drain beans, place in bowl

2. Chop bell pepper, tomatoes, onion, zucchini, cilantro, and Serrano (chop finely) then combine with beans in mixing bowl

3. Squeeze in the juice from the limes, add paprika

4. Stir all ingredients together

5. Salt and pepper to taste

6. Garnish with avocado
