Jammin' PEACH-CHIA Pudding

Summer is the season of peaches!! This is a great breakfast item or dessert. It tastes like you put a lot of time and effort into it, but it takes barely any at all and it is a hit! So not only are you satisfying your sweet tooth, your getting some great nutrition too! Among the many benefits Chia seeds have heres a few fun facts chia seeds have 3x the iron of spinach, 5x the calcium, 3x antioxidant strength of blueberries and 2x potassium of bananas!

RECIPE

Serves 2

Cook time 10 minutes

Ingredients:

  • 1 cup coconut milk or non-dairy milk

  • 4 tablespoons organic chia seeds

  • 1½ tablespoons organic coconut palm sugar (or sweetener of choice)

  • 1 teaspoon pure vanilla extract

  • 2 peaches (white or yellow)

  • 1 tsp lemon juice

  • ½TBS honey

Optional garnish:

•coconut milk yogurt

•toasted coconut flakes

•fresh peach chunks

•cinnamon

Method:

For Chia seed pudding combine chia seeds, milk, vanilla, coconut sugar in a mason jar or sealed container, mix together, put on lid, store in fridge for at least 6 hours...I like make this before bed and pop it into the fridge so it is ready in the morning! DONE! You could eat it as is or add the following Peach Jam recipe.

For Peach Jam wash, peel, a dice the peaches. In a small sauce pan combine diced peaches, lemon juice, and honey, bring to a boil then reduce heat to low and simmer for 10 minutes. You can leave it chunky or mash with a fork (like I did). Let the jam completely cool before serving!

I like to layer my chia seed pudding and jam so the flavors are in every bite, then I topped it off with a scoop of coconut milk yogurt, coconut flakes, and a dash of cinnamon! ENJOY :)
